Course outline

What is the course about?

A one day course for anyone who is interested in the appreciation of good food hygiene practices. You will learn
about safe food handling and how to reduce the risks of contamination within the food industry. You will need to bring proof of identity for the exam.

What topics will we cover?

- Definition of food poisoning and its causes
- Elementary bacteriology
- Prevention of contamination and food poisoning
- Personal hygiene
- Building of premises, care of equipment
- Pest Control
- Cleaning and disinfection
- Basic requirements of the Food Safety Act 1990, the Food Hygiene (General) Regulations 1970 and amendments.

By the end of this course you should be able to:

- Complete the theory exam paper
- Describe the symptoms of food poisoning
- List the causes of food poisoning and name four bacteria
- Explain the reproduction cycle, and the factors that influence their growth
- Identify toxins and spores
- Explain the role of temperature and time in their control
- State the importance of personal hygiene
- Describe essential washing facilities in the catering room
- Define the term food pest and describe the conditions in which they thrive
- List the signs of infestation and methods of control
- Explain the difference between cleaning and disinfection.

What level is the course and do I need any particular skills?

The course is aimed at catering employees. The course is at basic level, but involves a multiple choice written exam. No previous knowledge is needed to join the course but an interest in catering or food handling is helpful. Learners should be able to read and listen to information, summarise and re-present it clearly in a variety of formats.

How will I be taught, and will there be any work outside the class?

Lecture, question and answer, small group and pair work when possible. Videos, OHP, and handouts. Multiple choice exam at the end of the course.

Are there any other costs? Is there anything I need to bring?

A course manual and the exam fee is included in the price of the course. Please bring proof of identity.

Do I need to have an interview before I can enrol?

No.

What feedback will I get?

You will receive regular feedback from your tutor throughout the course, as and when appropriate. At the end of the course you and your tutor are asked to assess the progress you have made. There will be a multiple choice exam at the end of the course. On successful completion of the exam you will gain a certificate. The certificate is issued by the Chartered Institute of Environmental Health. It is required for jobs in the catering industry and jobs which require food handling e.g. nurseries, volunteer work.
